Ingredients

CHILI LIME BREAKFAST NACHOS

  • 2 eggs
  • 1 tbsp heavy cream
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup cheddar cheese
  • 2 bags
  • ½ avocado, chopped
  • ¼ cup fresh pico de gallo
  • 1 tbsp green onion, chopped
  • ¼ jalapeno, sliced

Method

  1. Turn your oven to broil.
  2. Prepare a small cast iron skillet with non-stick spray and turn on low heat.
  3. Whisk the eggs, heavy cream, salt and pepper together.
  4. Pour the eggs into the hot skillet and use a rubber spatula to scramble.
  5. Remove the eggs and add a layer of Quest Chips, scrambled eggs, half the cheddar cheese, another layer of chips and remaining cheese.
  6. Place the skillet in the oven for 3-4 minutes and the cheese has melted. Top with pico de gallo, avocado, jalapeno and green onion. Serve immediately.
